Vegan Superfood Pesto 

Oh my gosh, this pesto is so good. It is plant-based and has surprise ingredients for extra protein and leafy greens. I threw this one together last night with some basil from my garden.


We throw pesto on pasta & gnocchi but it's great to spread on toast, toss over roasted veggies or even use as a salad dressing!


Here’s the recipe:

Vegan Superfood Pesto 

In a food processor or blender combine:

1.5 cups fresh spinach

1/4 cup fresh basil

3 garlic cloves

1/4 cup good olive oil

1 lemon, juiced

2 tablespoons hemp seeds

Dash of salt


Add more oil or lemon to get the your preferred consistency. Most people don’t get enough leafy greens so this is a delicious way to sneak in some extras.


Vitamin C in the lemon helps your body absorb the iron in the spinach and the hemp seeds have healthy omegas and extra protein to help this round out your next meal or snack.
